Favorite Flan Recipe
The composition Flan is Like a
Woman (Paradise CD, Track 21) was inspired by our passion for flan.
Its polyrhythmic intensity conveys our cravings. While on tour in Europe
we indulge in all varieties whether it be flan, crème brulee,
crema catalana or crème caramel. We even finished one tour with
flan ice cream in Madrid at 4AM!

FLAN
1 cup sugar
4 eggs
1/2 cup 1% milk
1 cup half and half
1/2 tsp vanilla
1. Preheat oven to 350 degrees. Place 1/2 cup sugar in pan and melt
over medium heat, stirring constantly with a fork until it has melted
and turns amber. Immediately pour melted sugar into small ovenproof
bowl (3 cup) and rotate bowl to coat sides with the caramelized sugar.
2. In a bowl whisk eggs together. Whisk in the milk, half and half,
vanilla and 1/2 cup sugar. Strain through a sieve into the coated bowl.
3. Place bowl in a pan and pour boiling water in the pan halfway up
sides of bowl. Bake in top third of oven until center is set, 1 Hour.
Cool flan and run knife around edge of dish and invert onto serving
platter.
